Slivers of raw fish in an ice-cold sweet-sour broth, drunk like soup on a hot day.
Fishermen on the east coast invented this to eat quickly on the boat: raw fish sliced thin, tossed with vegetables and dropped into iced water spiked with chilli paste and vinegar. The sour, icy heat cuts the summer, and at the end you add noodles or rice to the bowl. Ulsan and Pohang are the two places best known for it.
