Busan milmyeon (cold wheat noodles)

Busan's take on cold noodles: softer wheat strands, a sweeter broth, shaved ice on top.

Refugees from the north brought naengmyeon made with buckwheat, but wartime Busan only had aid wheat flour, so they made the noodles from that — and milmyeon was born. The broth is simmered from bones with medicinal herbs, sweet and fragrant, served with shaved ice, a spoon of chilli paste and a slice of boiled pork.

Flavour: Sweet, cooling, gently spicy
