Buckwheat noodles tossed cold with kimchi and cucumber in chilled broth — Gangwon's summer dish.

Gangwon is mountainous and grows buckwheat better than rice, so buckwheat noodles are everyday food. Makguksu means 'noodles made in a hurry': boiled, rinsed cold, then either tossed with chilli paste or served in chilled broth with kimchi, cucumber and boiled egg. Paired with dakgalbi it is the classic Chuncheon meal.
