Hot bean sprout soup poured over rice with a poached egg โ Jeonju's morning hangover cure.
Jeonju's bean sprouts are grown with local well water and come out thick and crunchy. The soup is simple โ dried anchovy, sprouts, spring onion โ poured over rice and eaten hot, often with a small bowl of poached egg to sip first. The shops open before dawn, serving early workers and people coming off a long night.
