A bubbling pot of sour kimchi with pork and tofu โ the most familiar home meal in Korea.
The sourer the kimchi, the better the stew, so this dish was born from using up old kimchi. Pork belly is rendered, the kimchi fried in the fat, then water, tofu and spring onion go in. At restaurants it arrives still boiling on a portable burner, with rice and a few side dishes.
