🌸 Jinju bibimbap (hwaban)

The Jinju version, with raw beef, seasonal greens and a small clam soup on the side.

The Jinju bowl is called 'hwaban' — flower rice — because the vegetables are arranged in a coloured ring. Unlike Jeonju, it carries raw beef dressed in sesame oil in the centre and always comes with a small bowl of clam soup. Tradition holds that the dish descends from the meals of the soldiers defending Jinju fortress.
