Native black pork grilled over charcoal, dipped in warm anchovy sauce.

Black pigs are the island's native breed, raised longer than ordinary pigs, so the meat is firm, the fat crisp and even the skin is eaten. The cuts are grilled thick over charcoal, snipped with scissors at the table, and dipped in melchijeot — anchovy sauce kept simmering right beside the grill. Wrap it with perilla leaves and roasted garlic.
