Fermented skate eaten with boiled pork and kimchi — the most divisive dish on a Korean table.

The skate is fermented in a crock until it gives off enough ammonia to sting your nose. 'Samhap' means the set of three: a piece of skate, a slice of boiled pork and a leaf of cabbage kimchi eaten together, chased with makgeolli. In Jeonnam it is the prestige dish served at weddings and memorial rites; outsiders usually need a few attempts.
