Chewy potato-starch dumplings in a vegetable broth β filling food from the Gangwon mountains.
Gangwon potatoes are famous across Korea, and in the mountains people grate them for starch and roll it into balls dropped in soup. The ongsimi are chewy and translucent, cooked with courgette, onion and dried anchovy. This was food for the lean season; now it is a speciality you have to find a specialist shop to eat.
