Silver cutlassfish braised with radish and courgette in chilli โ the classic Jeju fish dish.
Cutlassfish caught around Jeju is larger and meatier than elsewhere. The steaks are braised in a pot with radish, courgette, chilli flakes and soy until the radish has taken on all the flavour of the fish. At restaurants along the island's south coast, a pot of galchi-jorim with rice and a dozen side dishes is the standard lunch.
