Grilled beef intestine dipped in soybean paste โ the definitive Daegu drinking food.
Makchang is the last section of beef intestine, grilled over charcoal until the edges char, crisp outside and soft within, dipped in soybean paste mixed with spring onion. Daegu has whole streets that sell nothing else, smoke pouring out from late afternoon until the small hours. It goes with the city's reputation: blunt, hearty, soju in hand.
