Bossam comes from gimjang day, when a household salts a hundred cabbages at once and lunch is boiled pork with the kimchi still fresh from the mixing bowl. The pork is simmered with soybean paste, tea leaves and cinnamon so it never feels heavy; you wrap it with cabbage, raw garlic, green chilli and a dab of salted shrimp.
